Roasted Pork, Asparagus and Red Potatoes

I have a quick, easy and delicious recipe for you tonight.
Ingredients
• 3 pork tenderloins
• 8 spears asparagus
• 2 red potatoes, cubed
• 1 packet Lipton Onion Soup Mix
• 1/4 cup olive oil
• Dash of garlic salt
1. Preheat oven to 375 degrees F.
2. Rinse asparagus; Snap off the tough ends.
3. Wash then cube the red potatoes.
4. In a large Ziplock bag, add the onion soup mix, olive oil, garlic salt, pork, asparagus and potatoes.
5. Seal the Ziplock bag, and shake to coat the ingedients.
6. Pour entire contents of bag into a large baking dish.
7. Bake at 375 for 40 minutes. Half way through the cooking time, flip the pork over plus stir the potatoes and asparagus.
Serves 2 adults & 2 small children.
We are really hooked on this recipe! The pork is so moist and tender. The asparagus and potatoes have great, crispy roasted flavor & texture.

That does sound like a quick and easy meal. Too bad I’m living off of canned soups and chilli this week, since my grocery bills are SKY HIGH.

Excellent timing – I was looking for something different than our usual to fix for the hubs’s bday this week and I think this fits the bill perfectly! Especially because is sounds easy and I only do EASY 🙂

Why Chef Jean that looks awesome! Pork has recently become one of my favorite dishes. My boyfriend grills it all the time and i swear it melts in my mouth! I actually get more excited to see pork on my plate than him. Sad, but true. That man knows how to cook a piece of pork I’ll tellya that!
I’m trying this recipe on one of his hockey nights. If he knows how well I cook it, then I’ll have to cook for the both of us..lol

I’ll have to try this recipe, my husband loves asparagus so I’m always looking for new ways to serve it. It makes sense using the onion soup mix but I’ve only used it for meat loaf.

Traci, I’d even make this with just the veggies. Roasted asparagus, oh my! So good! Hope your hubby enjoys it too.
We cook with Lipton onion soup mix a lot. Add it to sour cream for a dip. Add it to the crockpot with a bottle of beer to cook meats.

That looks REALLY good! The only thing I make with Lipton soup mixes are roasted spuds, which turn out great. They’re equally good using a ranch salad dressing packet.
